MAASHRA
~ A Way of Life
OUR STORY
"One day we realised the beauty of a life in a tent...being a Bedouin..."
These words by Muzaffar Ali, co-founder of Maashra, capture the spirit of this unique dining experience. Born from a desire to share the romance of Kotwara, the artistic sensibilities of its creators, and the exquisite flavors of Avadhi cuisine, Maashra is more than just a restaurant; it's an invitation to step into a world of beauty, tradition, and heartfelt connection.
Inspired by a life lived amidst horses, hounds, and the tranquility of the Tarai forest belt, Maashra brings the essence of outer Awadh to life. It's a place where the soul finds peace beneath a sloping canvas roof, adorned with an expansive 1835 map of India and Muzaffar Ali's evocative collages. Every detail, from the artistic memorabilia to the carefully curated menu, reflects the creators' deep passion for art, culture, and hospitality.
Maashra is a personal extension of Jahan-e-Khusrau, Muzaffar Ali's renowned Sufi music festival, offering a more intimate space to share his journey of Sufi thought, poetry, and music. Meera and Muzaffar Ali personally curate each experience, welcoming guests who appreciate the rich heritage of Awadh, Lucknow, and the Kotwara region.
The cuisine at Maashra is a journey back in time, reviving childhood memories and the delicate flavors of a bygone era. Each dish is a dialogue, a collaboration between the guest's desires and the chef's expertise, using recipes that have been passed down through generations and meticulously perfected. As Meera Ali, author of Dining with the Nawabs, puts it, it's about recreating the "flavors and fragrances of a sensitive milieu," much like Muzaffar Ali's iconic film Umrao Jaan.
Beyond the culinary experience, Maashra also offers a glimpse into the world of handcrafted beauty. Upon prior request, guests can explore the House of Kotwara Atelier shop, designed by Sama Ali, showcasing the exquisite craftsmanship of Meera and Muzaffar Ali's design label.
Maashra is not just a place to dine; it's a place to connect – with history, with art, with tradition, and with the heart.
OUR PHILOSOPHY
At Maashra, we believe that exceptional cuisine is a harmonious blend of the finest ingredients, time-honored traditions, and a deep respect for the land and community. Our culinary philosophy is rooted in the rich heritage of Avadh and the principles of Kotwara, emphasizing freshness, seasonality, and a commitment to supporting local artisans and producers.
FROM THE KOTWARA ESTATE TO YOUR TABLE
The foundation of our cuisine is the unwavering commitment to freshness. We source the majority of our ingredients directly from the Kotwara estate and nearby farms, ensuring that every dish is crafted with produce at its peak flavor and nutritional value. This farm-to-table approach minimizes our environmental impact and supports the local agricultural community.
A CELEBRATION OF THE SEASONS
Our menu is a reflection of the changing seasons, showcasing the bounty of each harvest. We embrace the natural rhythm of nature, creating dishes that highlight the unique flavors and textures of ingredients at their prime. This commitment to seasonality ensures a dynamic and ever-evolving culinary experience.
ROOTED IN COMMUNITY
Maashra is deeply connected to the local community. We prioritize sourcing ingredients from nearby farms and employing staff from the surrounding area. This commitment not only supports the local economy but also ensures that we are contributing to the well-being of our neighbors. We believe in fostering a sense of belonging and shared prosperity.
THE LEGACY OF AVADHI CUISINE
Our culinary repertoire draws upon the rich traditions of Avadhi cuisine, with recipes passed down through generations of the Kotwara family. Meera Ali, our culinary curator, meticulously selects and prepares each dish, ensuring an authentic and unforgettable taste of this royal culinary heritage.
GOOD FARMING PRACTICES
We prioritize sourcing ingredients from farms that use sustainable and responsible farming practices, minimizing the use of pesticides and herbicides. We are working towards incorporating more organic options into our menu as they become available.
CRAFTED WITH CARE
Every element of the Maashra experience, from the sourcing of ingredients to the preparation of each dish, is imbued with a deep sense of care and attention to detail. This is not just a meal; it is a hand-crafted culinary experience.
